Aim of this research was to investigate physical characters and some chemical characters of northeast local rice grain of Thailand. Physical characters were studied in term of weight, width and size of seed and dehusked seed including elongation rate and water absorption rate of 15 rice cultivars (cv.). Chemical test were checked by protein content, amylose content, lipid content, carbohydrate content, vitamin B1, vitamin B2, vitamin B3 and vitamin B6 content. The result showed that the longest seed of 15 cv. was Jowluang, 10.82 and 7.81 mm. in seed and dehusked seed, respectively. In contrast, cv. Kowjowhangmuyai (GS no: 554) showed the shortest seed and dehusked seed was 7.68 and 5.29 mm, respectively. The largest seed and dehusked seed were found in cv.Phaneaw, 3.61 and 3.10 mm, respectively. On the other hand, the narrowest seed and dehusked seed in this study was cv. Jowlaung and cv. Neawkheawngu, the result was 2.15 and 1.90 mm, respectively. The highest elongation rate of seed was found in cv. Kowjowhangmuyai (GS no: 555) (12.4 mm.) while the lowest was discovered in cv. Neawsunpatong (10.4 mm.). The cv. Neawdogjan (GS no: NRM 09003) presented the highest water absorption rate (75.66%) while cv. Jowdam (GS no: NRM 09008) showed the lowest water absorption rate (8.64%). The result of chemical analysis was found that cv. Neawdam1 (GS no: NRM 09001) showed highest protein content (11.63%) while cv. Kowjowhangmuyai (GS no: 555) showed lowest protein content (1.00%). Amylose content was measured between 4.19-27.88%, the lowest amylose content was recorded in cv. Neawkeawngu (GS no: 5605) (4.19%) whereas cv. Jowdam (GS no: NRM 09007) showed the highest amylose content (27.88%). The highest lipid content was found in cv. Jowdam (GS no: NRM 09008) and Kowjowhangmuyai (GS no: 554) (1.89%) while the lowest lipid content of 15 cv. was 0.33%, which found in cv. Jowluang (GS no: 10166). The cv. Neawdam (GS no: 621) showed lowest carbohydrate content (81.06%) opposite in cv. Neawdogjan (GS no: NRM 09003) which presented highest carbohydrate content (90.48%). The results of this study are also useful as basic data for local rice study for example, culture promotion, conservation and modified rice production in the future.
